Before making our handvo, we will be soaking 1 cup rice, ½ cup chana dal, ¼ cup toor daal, and 2 tbsps. Urad dal for at least 3-4 hours to get them all soft.

When ready, soak the water out and add all the daals and rice in a deep bowl to create a mixture.

Add the curd into the bowl. Blend the curd until it takes the form of a slightly coarse paste and becomes smooth.

Next, add 1 cup of grated bottle gourd, ½ cup of grated cabbage, ¼ cup of grated carrot, and 3 tbsps of coriander into the mixed curd.

Mix the ingredients well and further add ginger paste, green chili, sugar, chili powder, turmeric, oil, and salt into the mixture.

Make sure to blend everything well in the curd as it consists of many ingredients and needs their time to be adequately integrated for a good taste. Do not try to add any liquid or water substance to make the batter runny as we need it to be thick like idli batter consistency.

Finally, add 1 tbsp of eno or fruit salt into the final batter.

You can either bake or cook your handvo on tawa as it can be cooked both ways perfectly. Pour the mixture into the baking tray and cook on standard heat for 5-10 minutes or on tawa until you see the mixture change colors evenly. Make sure you give it enough heat so that the daals and rice are cooked thoroughly.
